The vacuum freeze dryer removes moisture from food by evaporation, thus producing solid products. It is different from evaporation, which produces concentrated liquid products. The main purpose of drying is to extend the shelf life of food by reducing the water activity of food. In the absence of sufficient water, microorganisms that cause food spoilage and decay, as well as many enzymes that promote adverse changes in food chemistry, cannot grow, reproduce or function.
